In Mexico, heirloom corn varieties showcasing a spectrum of colors are making a resurgence after white corn has long overshadowed their presence. Juan Vargas, a farmer from Ixtenco, has expanded his heirloom corn cultivation from just one acre in 2010 to 20 acres now, thanks to increasing demand, especially from foreign markets. The unique and vibrant corn varieties are garnering interest from chefs and consumers who seek organic, small-scale produce for an authentic taste in traditional Mexican dishes like tortillas. Although these colorful varieties account for less than 1% of Mexico’s total corn production, their appeal is growing internationally. The higher profit margins, combined with the Mexican president’s initiatives against genetically modified corn imports, are driving a resurgence in their cultivation and appreciation. Advocates point to the heirloom corn’s ability to withstand drought and its potential health benefits as reasons to preserve and expand its growth.
