Australian startup Eden Brew has garnered $25 million in investments, including backing from celebrities Bernard Fanning and Angus Stone, aiming to bring its lab-produced milk to market by 2025. Co-founded with dairy cooperative Norco, the company intends to manufacture a rehydratable powder, derived from cultivated proteins found in cow’s milk, as an alternative dairy product. Employing precision fermentation technology, widely used in producing essential cheese ingredient rennet, Eden Brew hopes not to replace, but augment traditional milk supplies in response to rapid food production needs. Despite its energy-intensive production, with 50% of a precision fermentation plant’s operating costs allocated to energy, and skepticism about its environmental impact, Eden Brew remains committed to delivering a product that closely mimics the sensory and nutritional profile of traditional dairy milk. The company will seek regulatory approval to sell its innovative dairy products in early 2023, aiming to leverage the subsequent review period to acquaint consumers with its novel offering.
